
Coconut energy balls, an easy snack full of energy and flavor

Made from pure ingredients such as coconut, dates and nuts, they are ideal as a snack, on the go, or after exercise. And the best part is; they're ready in 10 minutes and you don't need an oven.

RECIPE
STEP 1
Scoop the leftover pulp out of the MULSI sieve after making your own plant-based milk. It doesn't matter if you made almond, coconut, oats, or cashew milk. You can make these coconut energy balls with any pulp!
STEP 2
Put the pulp together with the dates, nuts and 100 g shredded coconut in a food processor and grind into a crumbly, sticky mixture.
STEP 3
Add coconut oil, possibly cocoa and vanilla, along with a pinch of sea salt. Use your hands to reassemble the mixture.
STEP 4
Roll the mixture into approximately 2.5 cm balls with your hands and then roll the balls in the shredded coconut.
You can also opt for finely ground pistachios, for example, or dip them in dark melted chocolate for a tasty variation
STEP 5
Put the balls in the fridge for at least 30 minutes to make them firmer.
Tip: Store in a sealed container in the fridge for up to 1 week, or freeze them for a supply of healthy snacks.
These energy balls are also ideal to give as a treat to your little one in the lunch box. So they still have something sweet to snack on, without it being bad for them. Also great as a treat when it's their birthday!
