Ingredients

  • 200 g MULSI pulp - drained and slightly damp
  • 100 g oatmeal (fine or coarse, to taste)
  • 50 g nuts or seeds of your choice - think cashews, walnuts, and pecan (chopped)
  • 80 g dates (pitted, finely chopped or pureed if you want the bars extra smooth)
  • 3 tbsp coconut oil, melted
  • 2 tbsp maple syrup
  • 1 tsp cinnamon or gingerbread spices
  • pinch of salt

This amount is good for about 10 bars.

Optional:

  • 30 g dark chocolate (finely chopped or topped)
  • handful of raisins, cranberries or apricot pieces

RECIPE

  1. Preheat preheat the oven to 170°C (160°C hot air).
  2. Place the pulp in a mixing bowl. Add oatmeal, nuts/seeds, dates, coconut oil, honey/maple syrup, herbs, and salt.
  3. Mix everything thoroughly to form a sticky dough. Optionally, add a splash of water if it is too dry.
  4. Line a baking pan (approx. 20 x 20 cm) with baking paper.
  5. Press the mixture firmly into the mold. Optionally, sprinkle chocolate or extra toppings on top.
  6. Bake golden brown in about 20-25 minutes.
  7. Allow to cool completely and cut into strips.

Store airtight in the refrigerator (shelf life ± 1 week). Perfect as a snack, breakfast or sports bar!
